Last weekend my mother reminded me that this recipe was from my great grandmother. It is filled with good things like cottage cheese, lemon juice, and yogurt, it is refreshing, especially after a hearty meal. Actually the original recipe called for heavy cream, but I substituted a drinkable yogurt from Whole Foods and found it great.. Also if you are near a Braums, their dairy products are great and no added hormones. I made it also in small muffin tins for smaller sweets for a party. And it can be baked in a graham cracker crust too if you prefer.
Cottage Cheese Pie
Preheat Oven to 450 degrees F.
12 oz. cottage cheese (I use Brauns lowfat) ,
mash thru sieve
1 large lemon, juice and rind
1 cup sugar
3 whole eggs beaten
1 tablespoon flour
lump butter size of walnut
2/3 cup lucky layla pina colada yogurt
2 teaspoons vanilla
sprinkle freshly grated nutmeg on top
Mash curd and add lemon juice and rind. Mix flour and sugar, and add to cottage cheese. Stir in milk and other ingredients.
Last add beaten eggs and fold in. Pour in unbaked crust.
Bake 10 minutes at 400 degrees 10 minutes and 300 degrees 40 minutes or until set.
Put in refridegerator
Better the next day.
