Healthy Pumpkin Bread


4 Tablespoons butter

2 cups Cup4Cup gluten free flour (or regular if you are not gluten free)

½ tsp fine salt

1 tsp baking soda

½ tsp baking powder

1 tsp ground cinnamon

½ tsp freshly grated nutmeg

¼ tsp allspice

¼ tsp gound cloves

1 cup sugar

½ cup splenda for cooking

1 can pumpkin

2 large eggs

¼ cup orange juice

½ cup chopped walnuts

oatmeal for top of loaf


Preheat oven to 375 degrees.

Whisk together flour, salt, baking soda, baking powder, cinnamon, nutmeg, allspice, and cloves in a mixing bowl.


Beat light butter till fluffy, add sugar, eggs, and orange juice and beat some more.  Add pumpkin and walnuts.

Stir into flour mixture only till mixed. Pour into greased loaf pan and sprinkle top with oatmeal.. Bake 45 minutes or until toothpick inserted comes out clean.
