gr-grits-Grits are one of those love them/hate them kind of foods.  These are healthier than the earlier version of jalapeno cheese grits.  The Crystal Hot Sauce really could be increased if you are a lover of hot foods.. Rex’s Seafood in Dallas serves Crystal, and we like it with everything from eggs to red beans and rice.



4 cups water or skim milk

1 tsp salt

coarse graound pepper

1 cup grits

3 T. Butter

4 oz. good quality gruyere cheese

2 oz. freshly grated parmesan

1 Tablespoon  Crystal Hot Sauce


In a heavy pot, scald milk and butter.  Add grits and stir continuously at lower heat about 5 minutes or until thick.  Remove from heat and add hot sauce, salt and pepper.  While still hot, beat with a hand beater for about 5 minutes or until smooth.  Pour into greased basking dish 8x 12.  Refridgerate  hours or overnight.  Grate cheeses and sprinkle on top. Bake at 400 degrees until bubbly.   Yum.
